I love it! I started baking many years ago as a child, when my dream was to be a chef. My life took a different turn and I ended up working for Local Government, in 2010 I opened a market stall 'The Dragonfly Bakery' at Watton's Farmers Market. Working with local producers reinvigorated my passion for local ingredients and produce. I source and use the best local ingredients. I use eggs from my own chickens and I use fresh uncultured buttermilk from Nortons Dairy in Frettenham. It makes THE best scones in the world! I can't believe people don't use buttermilk more. I also use as much locally grown produce in my baking. About Claire I am originally from Northern Ireland and moved to England to study Geography at University. I met my husband James and settled down in Ashill for ten years before moving to Yaxham in 2009. I love good home cooked food, comfort food, food that makes me feel good. Since I was little I was passionate about cooking and baking and particularly enjoyed cooking for other people. My training has been through watching generations of my family bake. When I was 10 I chose to study with a local women renowned for her baking skills. I just love to see other people eat my food. When I was young we used a lot of buttermilk in our cooking. We used it to make fresh Sodabread, pancakes and scones and it is one of my enduring memories. To me, happiness is sitting down with a cup of great coffee, topped with whipped cream and a big slice of caramelised pecan cake. We’re proud that everything our producers display actually comes from East Anglia That’s right, all our produce being sold must have been grown, reared, caught, brewed, pickled, baked, or processed in East Anglia. Either the producer, or someone directly involved with the production, must be selling the produce so you can ask how the food is produced and grown and at the same time customer feedback is appreciated by the farmer.
