The traditional breed of herdwick, kept on Brighton and Hove City Council nature reserves of which they are naturally reared as this gives a better quality of meat.
They are taken to Tottingworth Farms Abattoir where they are prepared ready to be butchered, at Turners Traditional Butchers. Of which they are slowly hung to mature and tenderise.
The average weight of one boxed lamb is 20 - 25 kg
one boxed mutton is 30 - 35 kg.
